The in-line choppers allows to shred the product, coarsely or very fine, using different configurations and types of grids. The application of choppers ranges from tomato sector to fruit with and without stone up to vegetables. This phase is essential for the subsequent processing stages. Thanks to the easy access of the product to the grids, the heat exchange is facilitated in the next phase of enzymatic deactivation, either is Cold Break and Hot Break.
A further advantage in using choppers is the shredding of any grassy filaments escaped the sorting controls, which could cause a partial or complete obstruction of the exchanger tubes of the Cold Break and Hot Break groups, if not reduced in small size.

In the processing of fruit and vegetables, in order to obtain the desired crushed size, suitable for the following processing phases, are used the hammer mills, which can be fixed or floating. In case of floating hammers , in case of contact with any external part which are not able to crush, the hammer bounce avoiding breakage or premature wear.
Fixed hammers are present in the shredding of the "so-called" hammer crusher, which has the function of performing a pre-separation between pulp and stones before the fruit enters in the destoner or into the cold extraction, therefore it is more frequently applied in fruit with stone.
Even in crusher configuration, there are fixed hammers, which have the task of creating a suitable size before further grinding in the floating hammer mill, coften starting from whole fruits and vegetables and large.

Traditional tomato choppers are usually centrifugal with an impeller equipped with blades, which rotates at high speed and allows to obtain a first shredding of the product; then by means centrifugal force , impact on a sieve perpendicular to the entry of the product, allowing to obtain a finer shredding for a better enzymatic inactivation process thanks to a more efficient thermal exchange as well as a turboextraction.

For oxidation-sensitive products, direct injection of steam is also provided. The coupling between the motor and the rotating shaft can be achieved either by the interposition of a clutch in order to prevent any damage resulting from the presence of foreign bodies, or more simply by means of pulleys and trapezoidal belts.
